Ingredients

1 tbspolive oil
1 tbspbutter
3diced poblano peppers (seeds and membranes removed)
2 mediumonion
1/2 cupdiced carrots
4 cupvegetable broth
1 mediumpotato diced
8 ozMexican crema fresca (or sour cream or yogurt)
1tortilla chips
1 cupshredded Chihuahua cheese

Steps

Saute peppers, onion, carrot, in oil and butter for 5 min.

Add potato and stock.

Boil, then reduce to simmer. Cover and cook for 30 min.

Blend until smooth.

Add crema and stir.

Garnish with chips and cheese.
