Ingredients

  • 1 tbspolive oil
  • 1 tbspbutter
  • 3diced poblano peppers (seeds and membranes removed)
  • 2 mediumonion
  • 1/2 cupdiced carrots
  • 4 cupvegetable broth
  • 1 mediumpotato diced
  • 8 ozMexican crema fresca (or sour cream or yogurt)
  • 1tortilla chips
  • 1 cupshredded Chihuahua cheese

Steps

  1. 1

    Saute peppers, onion, carrot, in oil and butter for 5 min.

  2. 2

    Add potato and stock.

  3. 3

    Boil, then reduce to simmer. Cover and cook for 30 min.

  4. 4

    Blend until smooth.

  5. 5

    Add crema and stir.

  6. 6

    Garnish with chips and cheese.
