Ingredients

  1. 500 gramsready made shortcrust pastry
  2. 200 gramssundried tomatoes
  3. 200 gramsfeta cheese
  4. 300 mldouble cream
  5. 3eggs
  6. 50 gramsgrated cheese
  7. 1 dashsalt and black pepper

Steps

  1. 1

    Roll out pastry to fit your quiche tin, I use a 12inch tin.

  2. 2

    preheat oven to 200

  3. 3

    cover with clingfilm and chill for 30 minutes

  4. 4

    remove clingfilm from pastry and line with greaseproof paper and baking beans and bake blind for 15 minutes, remove paper and beans and put back in oven for 7 mins.

  5. 5

    Chop up sundried tomatoes and put on pastry base then crumble over feta cheese.

  6. 6

    break 3 eggs into a bowl add cream and salt and pepper, mix till combined

  7. 7

    pour into base covering tomatoes and feta. sprinkle over grated cheese.

  8. 8

    bake in oven for 25mins at 180 or until it feels just set in middle.

  9. 9

    serve with fresh crusty bread and salad. delicious hot or cold
