Ingredients

4 servings
  • 4 largeWhole zucchini
  • 1 cupFresh bread crumbs
  • 1/2 cupFinely grated Parmesan cheese
  • 1Salt
  • 1Black pepper
  • 1/4 cupExtra virgin olive oil

Steps

30 mins
  1. 1

    Depending on the width of the zucchini, half or slice into thirds length ways. Lay flat in a medium to large baking tray.

  2. 2

    Sprinkle grated Parmesan over the top

  3. 3

    Sprinkle fresh bread crumbs over the top of the cheese and then add salt and pepper to taste

  4. 4

    Drizzle olive oil all over

  5. 5

    Bake for 25-30 mins at 175deg Celsius and serve immediately.
