Steps

Add a tablespoon of sunflower oil to a pan and heat

Finely chop the red onion

Chop the red pepper into chunks

Finely chop the chili

Add the onion, pepper, chili and tin of tomatoes to the pan

Add the tomato and garlic purée to the pan

Add the sugar and chorizo sausage to the pan

Stir until sauce thickens. Leave to simmer for 10 minutes. Add some water if necessary.

Boil a pan of water and once boiling add the pasta and leave for 3 minutes

Drain the pasta and place back on the heat for 10 seconds to remove any excess water

Place pasta in serving bowl, add sauce, and finish with a light topping of Parmesan cheese
