
Roasted Red Pepper Hummus

Tahihi paste (1 tbsp) optional. If you use it, omit the cumin powder.

2 ways of doing this- buy pre-roasted red peppers and skip next step. DIYers, go to next step.

Set oven to broil. Slice and coat red bell pepper in 1 tsp. Olive oil. Place in broiler-safe pan and roast for 5-10 minutes, or until pepper looks a little blackened.

Put roasted red bell pepper, chickpeas, a little of the liquid (or water), a little olive oil, a little lemon juice, and all remaining ingredients (except cayenne pepper) into a food processor and puree until smooth. Keep adding a little chickpea liquid, Olive oil, and lemon juice to get the right consistency and flavor you want.

Garnish with cayenne pepper. Serve with fresh veggies or pita chips.
