Best meatloaf recipe. The glaze is superb. I have tried approximately 15 other meatloaf recipes in search of something to please my picky husband and satisfy my love of meatloaf. I tweaked it a bit. She puts the veggies through a food processor before mixing, but I find the extra dishes tedious. My favorite part is that it serves 10, which means I actually have leftovers :)

Ingredients

10 servings
  1. 1/4 cupQuick cooking oats
  2. 1 largeEgg, beaten
  3. 1/4 cupMilk
  4. 2 tspSalt
  5. 1 tspPepper
  6. 1 smallOnion, diced
  7. 1/2Carrot, peeled and minced (optional)
  8. 1Rib celery, diced
  9. 1 tspMinced garlic (2 cloves)
  10. 3 lbGround beef
  11. glaze
  12. 3/4 cupKeychup
  13. 2 tspPrepared horseradish
  14. 1 tspWorcestershire sauce

Steps

    Preheat oven to 325°F. Mix glaze ingredients and set aside.

  2. 2

    Mix all meatloaf ingredients except beef. Crumble beef over mixture and toss to combine. (Do not over mix, that makes meatloaf tough).

  3. 3

    Form into two loaves on sheet pan lined with tinfoil. Bake 10 minutes. Spoon on glaze.

  4. 4

    Bake 45-50 minutes longer. Remove from oven and let rest for 10 minutes, loosely renting with foil.
