Heat olive oil in cast iron skillet until it smokes

Brown chicken, skin side first

Remove chicken and add more oil

Add sliced onions and thyme; cook until slightly translucent

Add Chicken on top; pour in wine, and cover with foil

Check periodically and add wine as necessary. Cook until juice runs clear from the thigh (approximately 45mins)

Add sliced peach and basil; summer for 5-10 mins uncovered
