Ingredients

  1. 4 largeboneless skinless chicken breasts
  2. 1 cansweet corn drained
  3. 1 cankidney beans, drained
  4. 1 canblack beans, drained
  5. 1 packagestaco seasoning
  6. 1 cupsalsa
  7. 1 cupshredded cheese, mexican style
  8. 1crushed corn chips

Steps

  1. 1

    Preheat oven to 350

  2. 2

    Heat some oil in a large skillet

  3. 3

    Chop up chicken breasts into bite size pieces

  4. 4

    Fry chicken until no longer pink

  5. 5

    Add in drained corn, beans, taco seasoning and salsa and simmer for 15 minutes

  6. 6

    Transfer to casserole dish and sprinkle with 1/2 of cheese

  7. 7

    Add crushed corn chips to the top and top with remaining cheese.

  8. 8

    Put into oven on middle shelf for 20 minutes or until top is lightly brown
