Ingredients

  1. 75 gramscoco powder
  2. 180 gramsself raising flour
  3. 2 tspbaking powder
  4. 150 gramslight muscovado sugar
  5. 250 gramscooked beetroot
  6. 3beaten eggs
  7. 200 mlsunflower oil
  8. 2 tspvanilla extract

Cooking Instructions

    Preheat the oven to gas 5/190c and line a muffin tin with cases

    Sift together this ingredients and gently add the sugar bit by bit

  3. 3

    In a separate bowl use a stick blender and blend together.

  4. 4

    Add the flour mixture to the beetroot mixture then mix. Add to the muffin time a third of the way. Bake for 25-30 minutes until cooked. Check by putting in a knife if it comes out clean then its cooked.
