Put all ingredients except vanilla extract and oatmeal in a camp cup and bring to a rolling boil, stirring constantly. Boil for exactly one minute then remove from heat.

Add vanilla extract to liquids, stir, and quickly add to the oatmeal in your camp pot.

Stir liquid and oatmeal together with as few strokes as possible and spoon out cookie-sized blobs onto whatever flat food-safe surfaces you have. I carry a thin, flexible cutting board, and don't forget to use the bottoms of pot lids if you need them.

Wait until cookies have hardened, then devour or put in your bear bag to have for breakfast the next day.
