remove membrane from your ribs or ask your butcher to do so when you buy them

preheat electric roster to around 350. you need just to get it hot for you will be backing in down later. remember good BBQ is cooked low and slow

add vinegar to a large mixing bowl. and place the ribs in it. you may need to add more vinegar but that's ok. you just want the ribs to marinate for about 5 minutes

while your ribs sit fill thr roster with about an inch and a half of water. this is how much I use because of the depth of my roster. you see we are going to use steam to help not only cook but keep the ribs moist and fall of the bone good. also before placing ribs in roster you need something yo keep them above the water not in it. I use a metal cookie cooling rack

layer your slabs on the cooling rack in the roaster. pour the remaining vinegar over the ribs a let it fall into water. this is where you bacm down the heat. you want your water to barely boil. water boils at 212°F Fahrenheit so I set my roaster about 235

spread on a layer of your favorite BBQ sauce now. and for the 1st 2.5 hours every 30 minutes. the ribs will be ready after 3 hours. put on your last dousing of sauce 10-15 minutes before serving

enjoy. and I bet you will be able to eat them with a fork and not need a wet nap to clean up with
