Ingredients

  • 1 tspGinger (finely minced)
  • 1 lbChicken (shredded)
  • 2 tbspSpring onions
  • 1 tspSesame oil
  • 1 canSweet corn
  • 5 cupChicken stock
  • 1 tspSalt to taste
  • 1 tspWhite pepper powder
  • 1Egg white
  • 2 1/2 tbspCorn flour
  • 4 tbspSpring onion greens

Steps

  1. 1

    Chop ginger, green onions, white onions. Slice frozen chicken tenders thinly.

    Heat oil in a deep vessel. Add spring onion whites and ginger and sauté for a minute.

  3. 3

    Add shredded chicken and sauté for a minute until the surface of the chicken pieces turns white.

  4. 4

    Add sweet corn and chicken stock and bring to a boil. Reduce flame and cook on low flame for a minute.

  5. 5

    Mix the cornflour in 4 tbsps of hot water and set aside.

  6. 6

    Add the cornflour mix and stir until the soup thickens on low to medium flame. Slowly add the beaten egg and continuously and gently stir in one direction only.

  7. 7

    Garnish with spring green onion and season with pepper.
