heat vegetable oil for deep frying skins

preheat oven 400°

cook potatoes in microwave about 10 min til soft throughout

cut in half and scoop out center, remaining skin should be thin, too much potato left takes away from other flavors. I use the scooped out potato for mashed potatoes next night

deep fry skins about 5 minutes in hot oil until golden brown and crispy.

add cheese, don't be skimpy the cheese will settle as it melts

add bacon to top and bake about 10 min until cheese is melted

add green onions and sour cream, ENJOY
