Ingredients

  1. 4Marinated artichoke hearts
  2. 8 eachMarinated roasted red peppers
  3. 8 sliceMozzarella/provolone cheese
  4. 3 tbspOlive oil
  5. 4 largechicken breast

Steps

    Trim chicken breasts

  2. 2

    Slice chicken breasts, in half almost all the way through to create a pocket

  3. 3

    Stuff chicken breast with one chopped artichoke heart and 2 big pieces of roasted peppers, and 2 slices of cheese. Use toothpicks to hold chicken closed

  4. 4

    Run chicken breasts with oil and salt and pepper

  5. 5

    Heat cast iron skillet, sear bottom of chicken breasts for 2 minutes and transfer to baking sheet

  6. 6

    Preheat oven to 375, bake chicken breasts for 40 minutes or until internal temp is 160
