Trim chicken breasts

Slice chicken breasts, in half almost all the way through to create a pocket

Stuff chicken breast with one chopped artichoke heart and 2 big pieces of roasted peppers, and 2 slices of cheese. Use toothpicks to hold chicken closed

Run chicken breasts with oil and salt and pepper

Heat cast iron skillet, sear bottom of chicken breasts for 2 minutes and transfer to baking sheet

Preheat oven to 375, bake chicken breasts for 40 minutes or until internal temp is 160
