Steps

boil chile pods till tender then place in blender with garlic and salt, blend til smooth place in shallow dish and set aside.

boil carrots and potatoes till fork tender , drain water and smash until almost smooth, add salt to taste ( may add butter if desired )

heat up tortillas until foldable without cracking

heat oil in fry pan, take a tortilla in ur hand add spoonfull of potato mixture then roll into a taquito dip in salsa and place in fry pan turn after 2 minutes or so when first side is crispy, repeat theses steps with the rest of the tortillas until all potato mixture is used up.

remove from oil when crunchy, and let sit on cookie rack to drain excess oil.

serve with sour cream, shredded lettuce or cabbage and salsa of your choice.
