Ingredients

2 servings
  • 2 tbspOlive oil
  • 1 mediumcarrot
  • 1 stalkcelery
  • 3/4 lbBoneless chicken breast, sliced
  • 14 1/2 ozCanned crushed tomatoes
  • 1 tbspBasil
  • 1Salt and pepper

Steps

  1. 1

    Heat oil in skillet over medium to high heat.

  2. 2

    Add carrots and celery and stir until softened. About ten minutes.

  3. 3

    Add sliced chicken and cook for five minutes.

  4. 4

    Turn chicken and add vegetables.

  5. 5

    Turn heat to low and stir for about ten minutes or until chicken is cooked.
