Boil water on high heat. Add brussel sprouts. Drain after 5 min.

Dry pan and on medium heat cook pancetta until crispy.

Add olive oil, garlic, and brussel sprouts. Adjust heat as needed

When brussel sprouts are caramelized and tender, add honey and vinegar and cook for 30 seconds
