Cut the pork into chunks to make it easier to shred later.

Blend the orange juice, vinegar, garlic, salt, achiote paste, cloves, oregano, cumin, and peppercorns until smooth, then strain the mixture.

Wash your pressure cooker, line the inside with aluminum foil, then add the banana leaves. Place the pork inside, pour in the strained marinade, add the washed allspice leaves, and wrap everything up.

Seal the pressure cooker tightly, making sure the leaves don't block the valve. Cook over high heat.

Once the cooker starts to hiss, reduce to low heat. From this point, cook for about 30 minutes. Let all the steam release and make sure the valves are down before opening the cooker.

Shred the pork, check the seasoning, and enjoy!
