Whisk together dry ingredients.

In a large mixing bowl, cream together butter and sugar. (I use a stand mixer for everything but it's not necessary.)

Add flax meal mixture and applesauce. Mix until combined.

Slowly add the dry ingredients, about 1/2 cup at a time, to the wet ingredients until fully incorporated. Mix for one minute.

Chill dough for an hour.

Roll dough in hands to form balls then roll dough in cinnamon/sugar topping. Flatten slightly on a cookie sheet lined with parchment paper.

Bake in a 350°F oven for 11-12 minutes or until edges are slightly browned. Do not overcook.

Cool completely and enjoy.
