Ingredients

  • dry Ingredients
  • 1 cupBrown rice flour
  • 1/2 cupSorghum flour
  • 1/2 cupTapioca flour
  • 1/2 cupPotato starch
  • 1 tspXanthan gum
  • 1 tspBaking soda
  • 2 tspCream of tartar
  • 1/2 tspSea salt
  • wet Ingredients
  • 1 cupNondairy butter
  • 1 cupEvaporated cane juice
  • 1 tbspFlax meal mixed with 2 tbsp hot water
  • 3 tbspUnsweetened applesauce
  • topping
  • 2 tbspEvaporated cane juice mixed with 1 tbsp cinnamon

Steps

  1. 1

    Whisk together dry ingredients.

  2. 2

    In a large mixing bowl, cream together butter and sugar. (I use a stand mixer for everything but it's not necessary.)

  3. 3

    Add flax meal mixture and applesauce. Mix until combined.

  4. 4

    Slowly add the dry ingredients, about 1/2 cup at a time, to the wet ingredients until fully incorporated. Mix for one minute.

  5. 5

    Chill dough for an hour.

  6. 6

    Roll dough in hands to form balls then roll dough in cinnamon/sugar topping. Flatten slightly on a cookie sheet lined with parchment paper.

  7. 7

    Bake in a 350°F oven for 11-12 minutes or until edges are slightly browned. Do not overcook.

    Cool completely and enjoy.
