
The Best Veggie Burger

Eating healthier is becoming more and more delicious. I love experimenting with flavors, textures and add nutritional values to meals in different ways. I added the pepper jack for flavor, fat and moisture. You can use any cheese you prefer. I would add some ground pepper if not using a spicy cheese, about 1/2 teaspoon. Freezing these keeps patties holding together nicely and keeps them ready on hand and fresh.

In a food processor add all the ingredients except beans.

Pulse several times . Add half of the beans and pulse until almost completely creamy. 6-8 pulses.

Add rest of the beans and pulse 3 more times. You want to see some beans.

On a parchment lined tray, scoop half a cup mixture out and spread into a 1/4 " thick patties. Continue until you have made all the patties. Leave space in between each patty.

Cover tightly and freeze for 3 hours or until patties are frozen through.

Transfer to an airtight container using wax paper in between each patty to keep from sticking.

To cook, in a skillet with some olive oil, about 1 tablespoon for two patties, heat oil over medium heat.

Place each burger in the oil and cook for 3- 5 minutes per side. You want to see each side get a dark golden brown.

Serve them nice and hot on a good quality bun.

Add sliced tomatoes, onions, pickles, mayonnaise to top the burger. These are just my favorite way to enjoy these.

NOTE: To caramelize onions slice onions thinly and add to a frying pan with 1/2 tablespoon oil. Over a low heat, let onions just cook, stirring every 4 minutes until they become golden to dark golden brown in color. It takes about 12 minutes on average. Cook your onions while garlic is roasting to save time. I hope this tip helps.
