Cut cucumbers in half vertically, and cut the two halves vertically so you have 4 long strips. Then cut out the soft seedy center. Chop the strips horizontally into 1 inch cutlets.

Combine sesame oil, rice vinegar, and soy sauce into small separate bowl and mix together.

Pour the sauce over the cucumber pieces into a serving bowl/plate.

Sprinkle toasted sesame seeds over cucumbers.
