1/4 mediumAvocado, sliced
1 tspextra-virgin olive oil

Combine egg and egg whites in a medium bowl. Season pepper (if desired); whisk to blend

Heat oil in medium skillet over medium-low heat.

Add egg mixture; cook, stirring occasionally, for 3 to 4 minutes or until eggs are set.
