Ingredients

  • 1/3 cupbulgur (cracked wheat)
  • 1 bunchgreen onions, sliced
  • 1tomato, diced
  • 1/2English cucumber, finely chopped
  • 1parsley, chopped
  • 1/4 cupolive oil
  • 1/4 cupfresh lemon juice
  • 1/4 tspsalt
  • 1 pinchcracked black pepper

Steps

  1. 1

    rinse bulgur in fine mesh sieve. cover with boiling water and let soak 20 minutes.

  2. 2

    meanwhile, combine remaining ingredients.

  3. 3

    rinse bulgur in cold water and squeeze excess water from it.

  4. 4

    stir bulgur into parsley mixture. chill at least 1 hour before serving.
