  1. 1/4 cupolive oil
  2. 1/4 cuplemon juice
  3. 1/4 cupWhite vinegar
  4. 2 cloveminced garlic
  5. 1 tspground cumin
  6. 1 tspdried oregano
  7. 1/2 tspdried thyme
  8. 1/4 tspsalt
  9. 1/4 tspBlack pepper
  10. 2 lbskinless, boneless chicken breastfeeding cut into 1 1/2 inch pieces.
  11. 1/2 dozenwooden skewers
  12. 2 largeGreen or red bell peppers cut Into 1 inch pieces
  13. 1 largeonion quartered and separated Into pieces
  14. 1 dozencherry tomatoes
  15. 1 dozenmushrooms

  1. 1

    Whisk oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper (to taste) in a large glass or ceramic bowl. Cover and marinate in refrigerator for at least two hours.

    Soak wooden skewers for about 30 minutes before use.

  3. 3

    Preheat outdoor grill for medium-high heat and lightly oil grate.

  4. 4

    Remove chicken from marinade and shake off excess liquid. Discard remaining marinade. Alternate chicken with pieces of bell pepper, onion, cherry tomatoes, and mushrooms onto the skewer

  5. 5

    Cook the skewers on grill, turning frequently until nicely browned on all sides. About 10 minutes.
