Ingredients

  1. 1 lbground beef 93% lean
  2. 3 cupbeef broth
  3. 1 cupwater
  4. 4 cloveof garlic, minced
  5. 1 tbspdried parsley
  6. 1 tbspdried basil
  7. 128 oz can diced tomatoes
  8. 16 oz can tomato paste
  9. 1 cupV8
  10. 12 ozelbow pasta
  11. 1/4 tsppepper
  12. 1/4 tspsalt
  13. 1 cupshredded cheese for topping (optional)
  14. 1 bagfrozen peppers & onions, cooked and drained
  15. 2fresh summar squash, small, diced
  16. 3fresh zucchini, small, diced

  1. 1

    First mix together the can of tomatoes and tomato paste in crockpot.

  2. 2

    Next add broth, beef, garlic, parsley, basil, onions and peppers, zucchini and summer squash, V8, salt and pepper.

  3. 3

    Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours.

  4. 4

    When 30 minutes are left of cook time, add in the 1 cup of water and noodles. Stir to combine. Put lid back on and continue cooking for 30 minutes.
