Heat olive oil over medium heat in a large pan that has a lid. When the oil is hot, add sausages and brown slowly. If they sizzle and crackle too much, reduce heat. You want gentle browning, not sear. Cook several minutes until brown on all sides, then remove from pan and set aside.

Increase heat to high and add onions and peppers. Toss so they get coated with oil in pan and sear them stirring every so often. You want some blackening. Once seared, add garlic and cook for 1 more minute.

Add marsala and with wooden spoon, scrape bottom of pan to release all browned and blackened bits. Let wine cook down by half.

Add tomatos, oregano and red pepper flakes and stir well to combine. Add sausages back in. Bring to simmer the reduce heat to low. Cover and simmer about 20 mins.
