Found this recipe on the back of a pork loin package from costco, sounded yummy, haven't tried it yet.
Steps

Place pork in medium resealable bag.

Mix together lime juice, oil, and fajita seasoning, set aside 3/4 cup

Pour remaining marinade over pork, close back, turn bag to evenly coat pork with marinade

Refrigerate 2 to 6 hours, turning bag occasionally

Cook chops desired way, (grill or oven) occasionally baste with reserved marinade

Remove and cover with foil, let rest for 3 min

For cream, combine sour cream, cilantro, and lime juice,

To serve, thinly slice chops, pave meat and vegetables on half of each tortilla, serve with cream and if desired salsa

To grill vegetables, cut 2 medium bell peppers and 1 small sweet onion into 1/2 inch strips, toss with 1 to 2 tablespoons of olive oil, pave in grill basket grill over medium heat about 8 minutes or until crisp-tender, turning occasionally
