Melt coconut oil in large pan. Add onion and sauté for 4-5 minutes. Add bell pepper, garlic, and salt. Stir for a minute.

Add curry paste, coconut milk, and pumpkin puree. Mix and bring to a simmer. Add chicken and cook for 10-12 minutes, or until chicken is cooked. Add lime juice.

Top with cilantro and cashews. Can put over cauliflower rice is desired.
