
Butter pecan shortbread cookies/wedding cookies

Preheat oven to 350

Beat butter, sugar & vanilla till light and fluffy

Gradually add flour and salt and then pecans on low speed till blended

Dtop by tablespoon cookie scoop and Shape into finger sized logs and place on ungreased cookie sheet

Bake on middle rack 14 to 15 minutes till bottoms are slightly browned

Let cool 2 minutes then GENTLY roll in a bowl of sifted powdered sugar and cool on rack. they are very delicate until cooled.

Roll cooled cookies a second time in powdered sugar and store in airtight container.
