Ingredients

  1. Marinade
  2. 6 clovegarlic, peelee
  3. 1 tbspwhite peppercorns, whole
  4. 2 tspcoriander seeds, whole
  5. 2 tbspcilantro roots, finely chopped
  6. 3 tbspoyster sauce
  7. 2 tspsalt
  8. 1 tspsugar
  9. Batter
  10. 1 1/2 cuprice flour
  11. 1 tspsalt
  12. 1 tspChicken bouillon
  13. 1 cuplimestone water or plain water with 2 teaspoons baking soda.
  14. Dry Coating
  15. 2 cuprice flour

    Pound first 4 ingredients in mortar to form paste.

  2. 2

    Add paste to chicken along with the remaining marinade ingredients.

  3. 3

    Marinade format least 6 hours.

  4. 4

    Whisky together the batter ingredients. Batter should be thin.

  5. 5

    Dunk each piece of chicken into batter, thoroughly covering each piece. Then immediately coat with rice flour.

  6. 6

    Let coated chicken set for 20 minutes.

  7. 7

    Fill skillet at least 1/4 high with oil. Heat oil and add aromatics : 2-3 pendants leaves, bruised and knotted, or 1 large yellow onion, quartered with skin.

  8. 8

    When oil reaches 350°F, remove and discard aromatics and gently drop chicken pieces into oil. Space out the addition of each piece of chicken.

  9. 9

    Fry chicken for 25-30 minutes.

  10. 10

    Note, recipes calls for chicken with bones. If using boneless chicken, dilute the marinade by adding 1 cup of water with baking soda and marinade for 2-3 hours only. Also adjust the batter by reducing salt by half.
