Ingredients

  1. 1 bunchleeks
  2. 1 bunchblue cheese
  3. 1 tbspbutter
  4. 15 ozleeks
  5. 7 ozPotato
  6. 2 eachbay leaf
  7. 1 eachsalt and pepper
  8. 4 ozblue cheese
  9. 34 ozchicken broth
  10. 3 tbspheavy cream

  1. 1

    Clean leeks by slicing length wise and rinse throughly

  2. 2

    Melt butter in pan Cut up leaks and potatoes and cook in butter

  3. 3

    Sautee until soft covering with a butter wrapper to help retain moisture

  4. 4

    Add the bay leaves allowed to the veggies to cook for about 8 minutes make sure to stir occasionally to prevent burning and cook on very low heat lid should be on Pan

  5. 5

    Remove bay leaves

  6. 6

    Remove the butter paper then add chicken stock

  7. 7

    Cook until soft blend with immersion blender

  8. 8

    Add crumbled blue cheese and cream

  9. 9

    Be sure and remove the bay leaves before blending

  10. 10

    Save some of the blue cheese to sprinkle over when serving

  11. 11

    Taste and add salt and pepper as needed
