cream softened butter

Lemon juice, lemon zest, crushed garlic and fresh herbs parsley should be one of these

Combine flour salt and pepper for dredging

Beat 1 egg for dredging

Use bread crumbs for dredging

Remove skin from chicken breasts

Butterfly the chicken breast

Place garlic butter inside the chicken breast

Pull the chicken breast back over sealing in the garlic butter

Dredge chicken in flour, beaten egg,then bread crumbs

heat a pan with the little butter and vegetable oil to medium heat or just until a wisp of smoke comes off pan

Place the chicken breasts into the pan and turn the heat down a little careful not to burn

Brown both sides

Cook on very low heat until done
