Steps

Melt the butter in a large pan on medium heat

Add the onion and crushed garlic to the butter and cook for about 5 minutes until the onion is soft but not brown.

Add the stock and potatoes. Bring to the boil then simmer for 15-20 minutes until the potatoes are soft.

Add the broccoli, nutmeg and black pepper and continue to simmer for about 7 minutes

Blend in the food processor, slowly adding the cream as you go. Blend until smooth.

Serve with bread and croutons.
