Ingredients

1 serving
  • 4or 5 roma tomatoes, cored and sliced
  • 2 clovegarlic, thinly sliced
  • 1 canartichoke hearts, drained
  • 2 tbspextra virgin olive oil
  • 1salt and pepper
  • 1 tspsugar
  • 2 tbspflour
  • 1mozzarella cheese
  • 1fresh basil
  • 1lb. chicken

Steps

  1. 1

    Combine all ingredients except mozzarella cheese, fresh basil and chicken in a bowl; mix together.

  2. 2

    Place the tomato mixture in with the boneless skinless chicken breasts (seasoned with salt and pepper) in a baking dish. Place in 350°F oven and bake until the chicken is almost done.

  3. 3

    Remove chicken from oven and sprinkle mozzarella cheese over the top. Place chicken in the broiler for a few minutes until the cheese is golden brown and the vegetables are caramelized.

  4. 4

    Remove the chicken from the oven and sprinkle some fresh basil on the top. The heat of the dish will wilt the basil.

  5. 5

    If desired, serve over pasta.
