Ingredients

  1. 1 mediumcauliflower
  2. 1 largetomato
  3. 1 bunchcilantro (2 tbsp needed)
  4. spice blends order at www.waverleykitchens.com
  5. 1/2 tspWK SEED BLEND
  6. 2 1/4 tspWK SABJI BLEND
  7. pantry items
  8. 2 tbspcooking oil (your choice of oil)
  9. 3/4 tspsalt (to your taste)
  10. 3 quartnon-stick pan with cover

Steps

  1. 1

    Wash and cut cauliflower into medium sized pieces (3 cups); set aside

  2. 2

    Cut tomatoes into 1/2 inch cubes (3/4 cup); set aside

  3. 3

    Add 2 tbsp oil to pan and 1/2 tsp 'WK Seed Blend'

  4. 4

    Heat oil at medium heat until there is small movement in spices (usually 2 min)

  5. 5

    Immediately add cauliflower and tomatoes (or 2 tsp lemon juice) to pan, also add 2 1/4 tsp 'WK Sabji Blend'

  6. 6

    Cover and cook until cauliflower is tender yet crispy (usually 15 min); stir occasionally

  7. 7

    Optional: garnish with 2 tbsp coarsely chopped cilantro

  8. 8

    For a full meal add:
    - Naan, bread or heated whole wheat tortilla
    - Salad
    - Any bean curry
    - Yogurt

    Variations:
    - To make hot add chopped jalapeño pepper or red chilli powder
    - Add 1 small potato in step 5
