Ingredients

4 servings
  1. 1 1/2 cupButtermilk
  2. 1/2 cupStone ground corn meal. Yellow or white
  3. 2 tbspButter
  4. 3/4 tspSalt
  5. 3Eggs. Separated
  6. 3Green onions. Sliced thin
  7. 1/2 cupShredded cheddar cheese

    Preheat to 375

  2. 2

    Butter sides & bottom of 4 cup casserole dish

  3. 3

    Warm buttermilk in saucepan over medium heat. Stir in corn meal Cook while stirring until thick & smooth. About 3 minutes. Stir in butter & salt ; remove from heat. Let cool.

    Will egg yolks into cornmeal mixture

  5. 5

    Add green onions & cheddar cheese. Stir well

  6. 6

    Beat egg whites until soft peaks form. Add to cornmeal mixture a little at a time. Folding gently to avoid flattening mixture scrape mixture into pan & bake 25 - 30 minutes until puffed , golden brown & set. Serve immediately.
