Set heat between med to med high, add oil.

Let oil heat up then add flour. You can always test by throwing some flour in the pan. Its ready when it bubbles.

Brown flour. This is a preference as the gravy will be as dark or light as your browned flour. You don't want the flour to sit in the oil or it will burn, you need to keep attention to the flour.

When the flour color is to your liking, add 2 cups of broth. Whisk out lumps.
