Ingredients

  1. Stock
  2. 8 mediumTomatoes
  3. 1/2 bunchshallots, mostly white part
  4. 300 gramsPork
  5. 2 piecebun rieu stock cubes
  6. 4 1/2 literwater
  7. 4 tbspfish sauce
  8. 1 tbspshrimp paste
  9. 1 tbspcrab paste
  10. 1 tbsptomato paste
  11. 1 tspolive oil
  12. 1 smallhandful dried shrimp
  13. 10 mediumfried tofu
  14. Rieu
  15. 1 cancrab meat
  16. 1 clovegarlic
  17. 1 tbspcrab paste
  18. 2 mediumeggs
  19. 1 tspolive oil
  20. Other
  21. 1 eachbag vermicelli

    Cut tomatoes into quarters

  2. 2

    Chop shallots

  3. 3

    Cut pork into medium size pieces or if your using bones, leave as is.

  4. 4

    Heat pot, add olive oil, tomatoes and shallots. Cook until soft. Then add pork and continue cooking.

  5. 5

    Add water, dried shrimp, bun rieu stock, fish sauce, crab paste, shrimp paste and tomato paste. Bring to boil, then reduce to simmer.

  6. 6

    Rieu - heat saucepan, add chopped garlic, crab meat and crab paste. Fey for a minute or so

  7. 7

    Beat eggs and add fried rieu, stir to combine

  8. 8

    Add tofu to stock

  9. 9

    Once you are happy with stock taste, pour the rieu in slowly. Try not to stir as it will break the rieu. The rieu will cook in the stock after several minutes.

    Boil vermicelli until soft and drain
