Ingredients

25-30 mins
2-3 servings
  1. 1 cupQuinoa
  2. 2Sweet Potato peeled and cubed
  3. 1Onion finely sliced
  4. 3Garlic cloves chopped
  5. 1Green Chilli chopped
  6. 1 tspRed Chilli powder
  7. 1/2 tspRoasted Cumin powder
  8. 1/2 tspRoasted coriander powder
  9. Cracked Peppercorns for seasoning
  10. Salt for seasoning
  11. Few chopped Red and yellow bell Peppers for garnish
  12. 1/4chopped Coriander leaves
  13. 1 tbspLemon juice
  14. 2 cupsWater or as required
  15. 2 tbspsOil

Steps

25-30 mins
  1. 1

    Wash the quinoa couple of times in water. Add them in a pot and on medium heat cook stirring continuously till the water is absorbed.

  2. 2

    Now add 1½ cup water and cook till the quinoa is cooked and water is evaporated completely. It might take approximately 15-20 mins. Keep aside.

  3. 3

    In a pan heat oil. Add onion and garlic and saute for about 2 mins till it turns soft.

  4. 4

    Add red chilli powder, cumin and coriander powder, salt to taste and saute for a min.

  5. 5

    Add ½ cup water, sweet potatoes and cook till the sweet potatoes is cook for about 7-8 mins.

  6. 6

    Add the cooked quinoa into the sweet potato mixture, chopped coriander leaves, lemon juice and season with cracked peppercorns, mix well.

  7. 7

    Garnish with chopped bell peppers and few chopped coriander leaves and serve
