Ingredients

40-50 min
12-15 paratha
  1. For dough
  2. 4 cupAll purpose flour / wheat flour
  3. 1 tbspButter / oil
  4. 1 tspSalt
  5. Baking soda 1/2 tsp (optional)
  6. Warm Water as per required
  7. For stuffing
  8. Butter 30-40 grm
  9. 100grm paneer grated
  10. 1Onion chopped medium size
  11. 2boiled potato mash
  12. 50grm cauliflower boiled mash
  13. 1 cupGreen peas
  14. 1 tspginger grated
  15. 1 tspgarlic finely chopped
  16. 2-3Green chilli finely chopped
  17. 1 cupcabbage chopped
  18. 1/2 cupcarrot grated
  19. 1/2 cupcapsicum chopped
  20. 1 tspRed chilli powder
  21. 1/2 tspturmeric powder
  22. 1 tspcoriander powder
  23. 1 tspcumin powder
  24. 1 tspchaat masala
  25. Salt as per required
  26. 2 tbspShezwan chutney
  27. Coriander leaves 2 tbsp
  28. 50grm cheese grated (optional)

Steps

40-50 min
  1. 1

    First chopped all the vegetables

  2. 2

    Chopped cabbage

  3. 3

    To Make a soft dough take big bowl add whole wheat flour, butter and salt knead with warm water to make a soft dough

  4. 4

    Rest it for 15-20 min

  5. 5

    I had used wheat dough bcoz it's was more healthy than all purpose flour in wheat flour no use to add baking soda

  6. 6

    Heat the kadai add butter

  7. 7

    Add ginger and garlic

  8. 8

    After that add chopped onion

  9. 9

    When onion get light brown then add green peas

  10. 10

    When green peas get soft add chopped cabbage

  11. 11

    After that add boiled mash cauliflower and potato sauted for 1 min

  12. 12

    After that add all masala and shezwan chutney

  13. 13

    Mix it well add salt

  14. 14

    After that add grated paneer, carrot and chopped capsicum

  15. 15

    Mix it well saute for 2 min add chopped coriander leaves

  16. 16

    Then take a big round dough

  17. 17

    Make a big round roll

    Add suffing in a medium

  19. 19

    Then cover it with four sides

  20. 20

    Then slowly press it with hand

  21. 21

    After than heat the tawa place the paratha in the tawa apply oil or butter on both side of the paratha to make crispy

    Like this crispy paratha from the both sides

    Mughlai paratha is ready to serve with dahi and salad

    You can give any shape you like as circles or triangles shape paratha
