Brenda's Carrot Cake Protein Energy Bars

Preheat oven to 375°F.

Line a baking sheet with silicone baking mat or parchment paper.

Mix egg replacer and warm water until it starts to get kinda foamy. Combine egg mixture with mashed bananas, maple syrup, non-dairy milk and vanilla in a large bowl with a hand mixer.

Whisk together dry ingredients in a small bowl. Once incorporated add to wet mixture and mix till smooth.

Add shredded carrots and raisins and mix until just incorporated. Allow mixture to sit for1-2 minutes to thicken up.

Use about 1/2 cup of mixture per bar, depending on how big you want your bars. Form the mixture into a ball and flatten to form a bar shape.

Bake bars for about 22-25 minutes, or until a toothpick comes out clean. Tops should be golden and tops slightly cracking.

Remove from oven and allow to cool in the pan for about 5 minutes before transferring bars to a cooling rack.

Once cooled completely, top with a drizzle of coconut butter or icing.
