Finely chop the spring onions, garlic and chilli and place in a large pan with a dash of olive oil. Heat and soften for 2 minutes, don't let the garlic burn.

Take off heat. Add the stock cubes to the water and stir. Chop the broccoli and add to the pan with the vegetable stock and the mixed hers, with a good pinch of salt and pepper.

Bring to a boil, then lower and simmer for 10 to15 min until the broccoli is softened. Take off heat.

Blend to a fine soup with a hand held blender. Crumble in the Stilton and return to the heat, stirring gently until the Stilton has melted in. Take off the heat, stir in the cream and serve with crusty bread.
