Ingredients

  1. 2 lbGround beef
  2. 2 lbRotini pasta
  3. 2 largeBell peppers chopped
  4. 1 largeOnion chopped
  5. 2 canDiced tomatoes 16 oz
  6. 16 ozPicante salsa
  7. 2 cupFrozen thawed corn drained
  8. 1 canBlack olives sliced
  9. 1 tspSalt
  10. 2 cupSharp cheddar cheese

Steps

  1. 1

    Bring a pot of water enough to cook 2 boxes of rotini to a boil. Then add rotini to water and cook until tender.

  2. 2

    While pasta is cooking chop onion and bell pepper in small pieces add to pan with 2lbs ground beef and brown then add 1 minced clove of garlic.

  3. 3

    Drain pasta and rinse if desired. Then put pasta back into to pot. Add the ground beef, bell pepper and onion mixture to pot.

  4. 4

    Drain diced tomatoes from can as well as drain frozen thawed corn then add to pot. Mix well.

  5. 5

    Then add sliced olives, salsa and cheese to pot. Mix very well and serve. Can also serve corn bread with it.
