Preheat oven to 400°.

Whip egg white from separated egg to stiff peaks.

Mix egg whites (not stiff one) , melted butter, egg yolk, and 1 Tbs almond milk or cream. Add the coconut flour and baking powder and mix gently. Fold in the stiff egg white.

Grease 6 cups of a muffin tin (I used Baker's Joy spray) and evenly distribute the batter. Bake for 20 minutes or until starting to brown.
