  1. 250 gramsRice Vermicelli Noodles
  2. 2 tbspSesame oil
  3. 6 smallSpring onions
  4. 175 gramsButton Mushrooms
  5. 1/2 mediumCucumber
  6. Dressing
  7. 4 tbspSesame oil
  8. 2 tbspThai Fish Sauce (any)
  9. 2Juice of limes
  10. 1 tspSugar
  11. 1 tspHot Chilli Sauce (or more)
  12. 2 tbspChopped Fresh Coriander

    Soak the noodles in a bowl of hot water for 10 minutes, or according to the packet instructions. Drain and place in a large bowl. Add the sesame oil and toss until the noodles are coated with the oil.

    Slice the spring onions and mushrooms, then cut the cucumber into matchsticks. Add to the noodles in the bowl.

  3. 3

    To make the dressing, place the sesame oil, fish sauce, lime juice, sugar and chilli sauce in a small bowl and whisk together. Stir in the chopped coriander.

  4. 4

    Pour the dressing over the salad and toss until coated. Serve immediately and enjoy guys!
