Heat oven to 300°F.

Mix banana, peanut butter and egg until completely combined. Sift flour into mixture and combine until dough comes together.

Transfer dough to heavily floured wax paper. (Dough will be sticky; be sure to flour wax paper, rolling pin and cookie cutter.) Roll dough to 1/4" thickness and cut out cookies.

Place cookies on lined baking sheets and bake 30-40 minutes, or until golden brown. Allow to cool on cooling rack.
