I was asked to make pork chops, but I couldn't find a recipe that I liked. I wound up modifying and combining three different recipes to create this one. It is absolutely delicious, so I had to share it!

I was asked to make pork chops, but I couldn't find a recipe that I liked. I wound up modifying and combining three different recipes to create this one. It is absolutely delicious, so I had to share it!

Preheat the oven to 400°F.

Place the potatoes in a microwave safe bowl and cover with water.

Microwave the potatoes on high for 10 minutes.

Saute the mushrooms and onions in the olive oil in a large skillet for 10 to 15 minutes over medium heat.

Coat both sides of the pork chops with the pork rub and place in a greased 9x13 pan.

Drain the potatoes.

Add the potatoes, carrots, mushrooms, and onions to the pan with the pork chops.

Pour the cream of mushroom soup over everything in the pan.

Bake for 45 minutes, or until the pork is cooked and the vegetables are tender.
