Ingredients

  1. 2 tspOlive Oil
  2. 1/4 lbBoneless Skinless Chicken Breast, cut into bite-sized pieces
  3. 1/4 tspSalt and Pepper
  4. 1 cupChopped Sausage
  5. 1 cupChopped Onion
  6. 1/2 cupChopped Green Bell Pepper
  7. 1/2 cupChopped Celery
  8. 1 cloveGarlic, Minced
  9. 1 1/2 cupRice
  10. 2 3/4 cupChicken Broth
  11. 2 tspPaprika
  12. 1/2 tspDried Thyme
  13. 1/4 tspGround Red Pepper
  14. 14 1/2 ozCan Diced Tomatoes
  15. 1/4 lbShrimp, Peeled, Deveined and Chopped
  16. 1/4 cupThinly Sliced Green Onions

    Heat oil in large skillet over medium-high heat

  2. 2

    Sprinkle chicken with salt and pepper

  3. 3

    Cook chicken 5 minutes or until lightly browned, stirring occasionally. Set aside.

  4. 4

    Add sausage to pan and cook 5 minutes or until lightly browned, stirring occasionally

  5. 5

    Add onion, bell pepper, celery and garlic. Cover and reduce heat to low. Cook until vegetables are tender, about 12 minutes, stirring occasionally

  6. 6

    Stir in rice, cook 2 minutes, stirring occasionally

  7. 7

    Add broth, paprika, thyme and red pepper. Bring to a boil.

  8. 8

    Cover, reduce heat, and simmer 15 minutes

  9. 9

    Add chicken and tomatoes. Cook, uncovered, 10 minutes or until liquid is absorbed.

  10. 10

    Stir in shrimp. Cover and cook 5 minutes or until shrimp is done.

  11. 11

    Remove from heat. Let stand for 5 minutes. Fluff with fork. Sprinkle with green onions.
